1 large onion, chopped
2 red pepper, chopped
2 zucchini squash, sliced
1 large eggplant, peeled and cubed
4 large tomatoes, chopped
3 cloves garlic, chopped
1 bay leaf
1/3 cup bread crumbs
salt and pepper
Spray a pan with cooking spray. Brown the onion and the garlic (do not let garlic burn!). Add all the veggies and the bay leaf and simmer covered for 2 hours. Sprinkle on the breadcrumbs and cook
another 5 minutes. Remove the bay leaf and serve.
